Chocolate and Coconut Energy Balls

Ingredients

  • 8 soft dates (4-5 if using medjool)
  • 25g (1oz) milled flax seeds
  • 25g (1oz) chia seeds
  • 50g (2oz) ground almonds
  • 50g (2oz) desiccated coconut
  • 10g (1/2oz) cacoa, cocoa or carob powder
  • 4 tbsps nut butter or tahini
  • 1 tbsp mild tasting runny honey
  • 1 tbsp coconut oil, melted if hard

I love energy balls as they are so easy to make and are full of good-for-you ingredients. I make up lots and keep them in the freezer ready for when I’m heading out or need a snack. They defrost really quickly. If the dates you have are dried and quite hard, soak them in some boiling water for 30 minutes to soften them. 

1 Cut the dates into small pieces and place in a food processor with the remaining ingredients. Pulse then blend until the mixture starts to stick together.

2 Roll the mixture into balls the size of a walnut and place them on a baking tray. Allow the balls to dry out a little before placing them in an airtight container. Keep in the fridge for 4-5 days or freeze.
