Fish baked with Butter Beans, Tomatoes and Greens

Ingredients

  • 1 tbsp oil
  • 1 small onion, sliced
  • 1 garlic clove, crushed
  • 1/2 x 400g tin butter beans, drained
  • 150 ml (5fl oz) water
  • 2 tbsps tomato puree
  • 1 tsp paprika
  • 1 tsp oregano
  • 110g (4 oz) chard or spinach, sliced
  • 2 thick pieces of cod or haddock
  • salt and pepper plus extra paprika to sprinke

This is a really easy and healthy way to cook fish. I like to serve it on a bed of buckwheat or quinoa which only takes 10 minutes to boil so will be ready by the time the fish is cooked.

  1. Heat the oil in a small frying pan or shallow casserole preferably with a lid, and sweat the onion and garlic over a medium heat for 4-5 minutes or until they start to soften.
  2. Add the butter beans, water, tomato puree, paprika, oregano, chard or spinach and a little salt and pepper.
  3. Gently mix the ingredients to combine and then place the fish pieces on top and sprinkle these with salt, pepper and paprika.  Bring the mixture to the boil, cover with a lid (use foil if you do not have a lid) reduce the heat and simmer for 10-15 minutes or until the fish is cooked.
  4. Serve at once.
