Fish in Tamarind and Tomato Sauce

Ingredients

  • 1 tsp oil
  • 1/2 onion, finely diced
  • 1 garlic clove, crushed
  • 1/2 red pepper, diced
  • 1/2 tsp tumeric
  • 1/8 tsp chilli powder (optional)
  • 1 tbsp tomato puree
  • 1 tsp tamarind concentrate
  • 2 tblsp chopped coriander (optional)
  • 3 fl oz water
  • 2 thick pieces white fish (cod, hake, haddock)
  • salt and pepper

This delightful fish dish is full of flavour but so easy to make. It only takes minutes to prepare and very little time to cook. Ideal for busy lives.

1 Heat the oil in a small frying pan and sweat the vegetables and garlic until they begin to soften.

2 Add the tumeric, chilli, tomato puree, tamarind, coriander and water. Bring to the boil and place the fish on top, skin side uppermost. Simmer for 10-15 minutes or until the fish is just cooked.

3 Lift the fish out onto two serving plates, skin side down. Season the sauce to taste and pour it over the fish. Serve at once with vegetables, salad, or cooked grains.
