Stewed Pears with Orange, Ginger and Dried Apricots

Serves 4-6

Ingredients

  • 1 litre (13/4pts) fresh orange juice
  • 1 thumb sized piece fresh ginger,
  • cut into thin slivers
  • 24 dried apricots
  • 4 almost ripe pears, peeled and quartered

I love to make this recipe once the cooler weather returns and fresh pears are in season. It makes an ideal topping for winter porridge but is also ideal to keep in the fridge for mid-meal snacks or puddings.

1 Place the orange juice, ginger and apricots in a pan and bring the mixture to the boil. Simmer for about 20 minutes until the ginger and apricots are soft and the orange juice has reduced a little.

2 Add the pears, bring to the boil again and simmer for 2 minutes or until the pears are just starting to soften. Remove from the heat and allow the fruit to cool. Keep the pears covered with the juices if possible, to prevent them browning.

3 Serve warm or cold.
