This is one of the easiest and tastiest soup recipes ever. You can have it ready in minutes when you walk into the kitchen wondering what to have for lunch. I peel strips of orange rind and keep them in the freezer so that I always have them available to flavour dishes.
1 Place the onion, carrots and stock in a pan. Bring to the boil and simmer for 5-8 minutes or until the vegetables are cooked.
2 Add the tomatoes, orange rind and juice. Bring the mixture back to the boil, process until smooth then season to taste with salt and pepper and serve.
