I first came across pickled seaweed when I was judging a ‘free from’ award. I was so impressed that I decided to have a go at making my own. It makes a lovely accompaniment to meals and is so healthy.
1 Put the seaweed in the glass jar.
2 Place the cider vinegar in a small pan with the pomegranate molasses, honey or maple syrup and heat until the sweetener is dissolved. Pour the liquid over the seaweed pushing the seaweed down until it is covered
3 Allow to stand overnight for the seaweed to soften then store in the fridge until needed.
