Summer Fruit Sorbet

Ingredients

  • 200g (7oz) frozen summer fruits
  • 200g (7oz) cold defrosted or unfrozen summer fruits
  • 2 tsps honey (optional)

I often use frozen black forest fruits or summer fruits in this recipe but you can freeze down your own selection of fruits such as raspberries, strawberries, blackcurrants, cherries and blackberries. The fruit mixture is also ideal to make ice lollies for summer treats.

1 Process all the fruit (and honey if using) until smooth and creamy. Serve at once. If you want the sorbet for later, use an ice cream scoop and place balls of the mixture on a tray and freeze. Remove from the freezer about 15-20 minutes before needed to allow the sorbet to soften a little.
